Harvest in the morning
Corn harvested in the early morning after a cool night is noticeably sweeter and crisper than afternoon-picked corn. Heat accelerates the sugar-to-starch conversion significantly.
Boiling water before picking
The old-timer's rule for SU corn: get your pot of water boiling before you walk out to harvest. Walk, pick, walk back, drop it in. The faster from stalk to pot, the sweeter the corn.
Check daily near maturity
Mark your planting date and count 17–20 days after silks first appear. Start checking daily after that. Hot weather shortens the window; cool weather extends it slightly.
Save seed from open-pollinated varieties
Let a few cobs of open-pollinated varieties (not hybrids) dry on the stalk completely. Shell, dry further for 2 weeks, and store in a cool dry place. Free seed for next year.
Log your timing
Note: planting date, soil temp at planting, first tassel date, first silk date, first harvest date, and type/variety. This data makes your second season dramatically more precise.
Rotate next season
Never grow corn in the same spot two years in a row. Corn rootworm eggs overwinter in soil. Rotate to a different bed each season and plant a nitrogen-fixing cover crop (like clover) in the old corn bed.
